Yesterday, I did this with the help of a friend, he is actually a good chef.
Moose(Elk) rib eye with pumpkin puree, pickled shimei mushroom and braised onion. Sprinlke with chopped leek and some parsley.

I like both! Altho when I go somewhere fancy I definitely want it more rare than well done xD

The reason you make your red meat stakes pink/medium/medium rare is to make them softer and more jucier, which will explode in your mouth with flavour.
I know in the middle east that everything have to be well-done but that just destroys the meat and makes it very tough.

My mate is a chef and he gets hella annoyed when ppl order their steaks well-done. Basically ruins the entire steak ngl
